Stamped with the cheese makers guarantee of maturity. d’Argental Lingot - FRANCE: Beautifully smooth, creamy and delicate. Made in the region near the city of Lyon, this cows milk cheese has been reinvented as a milder version of a traditional washed-rind goats milk cheese once made in the region. Ringwould Dairy Cendre - WA: silky textured fresh goats milk cheese has a mild lemony clean flavor, with an ash coat seal for longer maturation. Queso de Manchego - SPAIN: a firm & dry, yet rich & creamy. The complexity of the flavour will depend on the age, but there should be a richness, reminiscent of Brazil nuts & burnt caramel with a slightly salty finish. The aroma should suggest lanolin & roast lamb.
